Vitamin C (also called ascorbic acid or ascorbate) is a water-soluble vitamin with potent antioxidant capabilities. Vitamin C is essential for many biological functions, most notably ensuring proper wound healing and maintaining cartilage. Some of the best sources of vitamin C include strawberries, citrus, tomatoes, potatoes and leafy greens.



As an antioxidant, vitamin C helps protect the body against the damaging effects of free radicals, by-products of metabolism. Free radicals can overwhelm healthy cells in the body under times of stress due to exhaustive endurance exercise, exposure to pollutants or smoking or other environmental insults. Damage caused by excessive free radicals has been linked to many diseases including cardiovascular disease, certain cancers and other conditions associated with aging.


The antioxidant capacity of fruits rich in vitamin C are theorized to be one explanation to why diets high in vitamin C from fruits and vegetables are associated with lower cancer risk, especially for oral, esophageal, stomach, colon and lung cancers. However, it seems that vitamin C, taken as a supplement, doesn't have the same effect. It's possible that some of the beneficial effects of vitamin C in fruits and vegetables may be due to a synergistic effect between vitamin C and other bioactive compounds found in fruits and vegetables.The Dietary Reference Intake for women is 75 milligrams vitamin C daily and 90 milligrams for men. Strawberries are an excellent source of the water-soluble nutrient. In fact, a serving of eight medium strawberries provides 96 milligrams of vitamin C or 160 percent of the recommended Daily Value (60mg). That's more vitamin C than one medium orange, which contains 74 milligrams of vitamin C.

Pat the chicken dry with paper towels and season it generously with salt, pepper, and the rosemary. Heat 2 tablespoons of olive oil over medium heat in a large Dutch oven and brown the chicken pieces in batches until nicely browned all over, about 5 to 7 minutes per batch.

We've been dying to make this vegetarian Reuben. Very quick, easy to make, and was a great dinner. The sandwiches were so good, we decided to make it again for lunch the next day! It was a hit with our omnivore friends, too. Instead of corned beef,



we use sauteed mushrooms and sun-dried tomatoes. The sandwich is just bursting with flavor and the tomatoes really complement the tangy sauerkraut and Russian dressing. We actually used this vegan Russian dressing recipe. We cut the amount of oil in half to make the dressing lighter and it turned out very well. Make sure to use a vegetarian Worcestershire sauce.




Heat the olive oil in a medium saucepan over medium heat. Add the onion and garlic and cook until golden brown, about 15 minutes. Add the sauerkraut, apple, and allspice, season with salt and a generous grinding of pepper. Cook until sauerkraut is tender, lightly browned and all the liquid has evaporated, about 15 minutes more.

Provided that the juice is diluted with water, there is no danger in taking any reasonable quantity of lemon juice. Be sure to choose firm, clear colored lemons that have not begun to wither. The first signs of ageing can be spotted where the stem was once attached to the fruit.

Grilling Vegetables is Really Quite Simple

For a shish kebab recipe bursting with healthy vegetables, this grilled vegetables recipe is perfect. It is also very versatile. You can change the vegetables you use and you can also change the dressing. In fact, when making grilled vegetables shish kebabs, you can use any marinade you like, including French, Italian or ranch salad dressing, sweet and sour, barbeque or teriyaki sauce.



The homemade croutons give plenty of flavor and homemade croutons are always tastier than store bought ones! With this crouton recipe, you can use whichever fresh or dried herbs you prefer, to give them your own personal touch. So get the bbq fired up because everyone will love this delicious grilled vegetables recipe!



Since vegetable can be grilled without any fat, such as butter or oil, they can be very healthy choice. When you fry vegetables or bake them, it is normal to add fat but this is not necessary with a lot of grilled vegetable recipes and you can baste them with another liquid or use a low fat marinade instead. You can use a healthy oil, such as olive oil, if you want to drizzle some over your vegetables while they grill. Adding herbs and spices gives more flavor to your barbecued veggies too.

Vegetables are part of a balanced diet and making delicious barbecued veggies means that you can enjoy eating vegetables rather than finding it a chore.



It is not possible to grill all vegetables because those with a high water content such as cucumber, lettuce, celery, and most leafy green vegetables wilt and go floppy and unappetizing on the grill. However, there are a lot of veggies, which grill nicely, so you can use this cooking method to transform all kinds of raw vegetables into hot, tasty grilled vegetable recipes.

Chicken Noodle Soup is a classic comfort food.


Place a large pot over moderate heat and add extra-virgin olive oil. Work close to the stove and add vegetables to the pot as you chop, in the order they are listed.


Add bay leaves and season vegetables with salt and pepper, to taste. Add stock to the pot and raise flame to bring liquid to a boil. Add diced chicken tenderloins, return soup to a boil, and reduce heat back to moderate. Cook chicken 2 minutes and add noodles. Cook soup an additional 6 minutes or until noodles are tender and remove soup from the heat.



Stir in parsley and dill, remove bay leaves and serve. This is a thick soup. Add up to 2 cups of water if you like chicken soup with lots of broth.

Heat a large heavy-bottomed soup pot with vegetable oil, 2 turns of the pan, over high heat. Once you see the oil ripple, add the sliced onion, chopped garlic and sliced peppers. Season the vegetables with salt and pepper and cook, stirring frequently, for 2 minutes. Add 1 cup shredded carrot and 6 cups chicken stock or broth. Cover with a lid and bring up to a simmer. Once simmering, add the chicken simmer 5 minutes then add noodles and simmer 5 minutes more. Remove the soup from the heat and add the cilantro, basil and the juice of 1 lime.
